Required Qualities for Culinary and Pastry Management
In choosing the right job, there are many influential factors such as personality traits, values, interests, skills, family circumstances, social conditions, etc. To succeed in this job, the student must have a great interest in food and cooking. He must also be creative in the process of preparing different foods and their special decorations. He must be patient and be able to withstand a lot of work pressure. And despite the difficulties and high pressures of work, this job is very attractive and enjoyable for him.
The student of this field must know that in the future he will have long and intensive working hours and may be at work from morning to midnight, although of course, depending on his workplace, his working hours can be less or more. The highest workload is usually on weekends and holidays because more customers go to restaurants on these days. The kitchen, where the cooks work, is often hot and humid and becomes very busy during meal times. The chef must always wear white clothes and a chef's hat to comply with hygiene rules. What are the conditions and skills required to enter the field of culinary and pastry management?
Many chefs used to enter this job experimentally in the past. But today, cooking has become a specialized profession and in order to enter this job, you must learn the necessary expertise and knowledge. Students who are interested in this field can enter the field of culinary and pastry management after passing the ninth year and if they get the necessary points in the academic guidance, enter the field of associate's degree and the field of services and choose the field of culinary and pastry management for their studies. Of course, they must also have the physical and motor ability to teach practical courses and relevant skills. If they want to go to university, they can continue their studies in the field of culinary science up to the bachelor's degree or in other universities in the field of hotel management, of which cooking is a sub-discipline. People who have studied in other fields or do not want to go to university can take various cooking courses in schools under the supervision of the Technical and Vocational Organization and get a valid certificate. The certificate of the Technical and Vocational Organization of Iran is internationally recognized and accepted by many countries.
What capabilities does a graduate of the Culinary and Pastry Management program achieve?
In addition to taking general courses, students in this field also learn 12 job skill standards and at the end of each standard they achieve the following capabilities:
Bakery Standard for Bulk and Semi-Bulk Bread: By passing this standard, the student will become familiar with both traditional and machine-made breads and must be able to prepare at least 10 types of bread.
Daily Special Cook Standard: In this standard, the student must learn how to prepare various daily dishes, including stews and kebabs.
Salad and Ordour Maker Standard: In this standard, the student becomes familiar with a variety of Iranian and Western salads and ordours, and can prepare a variety of salads, and learns to dress and prepare sauces.
Microwave Cooking Standard: In this skill, the student becomes familiar with the microwave oven, its operation and maintenance, and cooking food with this device, and learns the ability to cook with this device.
Traditional Chef: In this standard, the student learns to cook a variety of Iranian and Western dishes and can work as a cook's assistant.
Hotel Chef Standard Level 2: In this standard, the student can cook a variety of pasta, rice, sandwiches, shrimp, fish, kebab, haleem, shami, kebab dice, puree, and dolma.
Hotel Chef Standard Level 1: In this standard, the student can cook a variety of kebabs, stews, soufflés and vegetables, cocktails, tahchin, kebab, cutlets, and so on.
Hotel Pastry Standard Grade 1: In this standard, the student learns to prepare various types of pastry dough, cakes, pies, tarts, soufflés, desserts, ice cream and drinks.
Hotel Kitchen and Pastry Assistant Standard: In this course, students learn the competence of menu design and understanding, quality management and storage of raw materials, productivity management and cost control of food and beverages, and supervision of the hotel kitchen and pastry, and personnel management and preparation of the work unit.
Traditional Dessert Maker Standard: After passing this standard, the student can prepare various types of traditional Iranian desserts including sheleh zard, kachi, halva, and ranginak.
International Dessert Maker Standard: In this course, the student learns how to prepare various types of international desserts such as tiramisu, caramels and coffee shops.
Hotel Kitchen and Pastry Chef: After passing this skill, the student can equip and design the kitchen and also have the ability to plan the environment and manage the production and recognize various types of sweets and desserts.
What is the career outlook for culinary and pastry management?
You need to be patient to advance in the culinary profession because the process is usually very slow. Sometimes novice chefs have to do the same job in the kitchen for years. A professional chef can eventually become a chef. Of course, people who have enough capital can start their own restaurant, fast food or food preparation center and become Mr. or Mrs. Chef from scratch!! And if their work is successful, they can gradually hire other chefs and manage the management there themselves.
There are no accurate statistics regarding the employment situation and job market in this field. However, considering that people use fast food and restaurants more and more every day and these places are also increasing, it is clear that skilled and experienced chefs have good job opportunities.
Graduates of this field can work in various places including hotels, restaurants, fast food, food preparation centers or industrial kitchens. With sufficient experience and qualifications, they can become a chef or kitchen manager. They can also become a restaurant manager and sign catering contracts with various organizations and companies. They can get a coaching card from a technical and vocational organization and teach pastry and cooking at any school or work in pastry workshops or take orders from pastry chefs and deliver their work. They can also work independently and start their own restaurant, fast food or food preparation center.
Skilled and experienced chefs who have completed the necessary training courses can establish cooking schools by obtaining the necessary licenses and teach those interested in this job.
